
Ingredients: - 1 lb. sausage meat - 1/3 cup apricots - 1/4 cup PERi-PERi sauce - 1/4 cup breadcrumb - 4 slices white bread - 1 egg - Small handful parsley - Sesame seeds Instructions: 1. Preheat oven to 400°F. Mix sausage meat with apricots, parsley, PERi-PERi sauce, and breadcrumbs. 2. Lay bread slices in a line on a chopping board, slightly overlapping. Roll thinly with a rolling pin. 3. Place meat into a long sausage shape and lay onto bread. Fold bread over the sausage, seal with fork and brush egg on the fold. 4. Brush sausage roll with beaten egg, place on lined baking tray and bake for 15 minutes or until cooked through and golden brown. 5. To finish, cut into bite-sized pieces and place on a cooling rack. Server on platter (if they last long enough!).
