
Ingredients: 1/4 cup Peri-Peri sauce - 1 large sweet potato - 3 tsp chopped parsley - 4 tbsp feta (pre-crumbled) - 1 red onion - 2 tbsp olive oil - 1 red pepper - 3/4 cup diced chorizo - 2 poached eggs Instructions: 1. Heat oil in a large frying pan and add onion and red pepper. Cook for 5 minutes. 2. Turn heat down to medium. Add the chorizo and sweet potato, then cook for 12-15 minutes (until the sweet potato is tender and looking tasty). 3. Add PERi-PERi sauce and parsley. 4. Finish with a poached egg and crumble feta. Feast!
